Story
Established in 2021, the Asociación de Mujeres Emprendedoras de Pacaypite, led by Celmira Huaman, empowers local women in coffee farming. Grown in the lower-altitude Pacaypite village, the Catimor varietal undergoes meticulous cherry picking, selective harvesting, and controlled fermentation for results of the highest quality. Solar drying tents on raised beds ensure consistency over 15 days, countering the region's rainfall impact. Beyond coffee, the association leads a pioneering approach to training and income support, inclusively teaching the community how to keep bees for honey production, a holistic approach that includes training, unlocking government support, and fostering a sustainable, empowered future.

Origin
Thanks to this impressive mountain range, a unique and idyllic environment for the cultivation of coffee forms; clouds blown over from the Amazon collide here, bringing rainfall to the land.
Even though the main variety in the area is catimor and the altitude is much lower than those found in coffee farms in Cajamarca, Amazonas and Cusco, the producers here are sure that well picked, processed and dried coffee from Pacaypite can be great. The association has put great emphasis on picking ripe cherry, investing in pickers who are willing to pick selectively, in order to maximise the cup quality. Picking along with controlled and standardised fermentations help bring good quality and consistency to the cup. Drying is done on raised beds in solar drying tents for around 15 days, given that this area is quite rainy.
